The 'Professional' is worth it!
By Brian Wicks
This is the second Microplane grater that I have purchased, but the only 1 of the 2 that I would give a 5* rating to. The other grater was from the standard line not the professional line. With many kitchen items there are no significant differences between the two, but in this case it definitely matters!
All Microplane graters use the same basic technology for cutting -- technology which was originally developed for the woodworking industry but that has adapted for exceptional service in the kitchen as well. The razor sharp laser cut grating head will make quick & easy work of cheese grating or citrus zesting (if you have the proper size). I would suggest when choosing a size of grater that you choose 1 size larger as the sizing tends to run on the small size.
Now, what makes the professional so much better? Well, the standard line has 3 major/minor flaws: 1) the easy-grip rubber handle tends to capture water when washed, 2) the plastic molded frame holding the grating surface cracks when washed in the dishwasher, & 3) the head is so incredibly sharp that it must be kept covered, yet there is no easy way to due this except for the original tagboard cover.
The professional version fixes all of these issues. As you can see, the frame and handle are all stainless steel which eliminates issues #1 & #2 and the professional version comes with a nice snap-on plastic cover to protect the sharp head surface.
End result: HIGHLY RECOMMENDED

Essential tool, highly recommended!
By P. Dickens
This is really a terrific grater. It does the work of my standard box grater quite a bit faster and with less effort, plus it's a breeze to clean.
The "extra coarse" version seems to produce grated cheese about as coarse as the coarsest side of the box grater, which is fine for my grating needs. I'm glad I purchased the Professional version for the reasons cited by a previous reviewer, although I now see Amazon has added a "non-professional" version that includes a safety cover. I don't think that was available six weeks ago. I still think the extra $2.50 is worth the more professional handle.
It's so sharp that it even grates mozzarella without the cheese turning into a mushy substance that has to be cleaned off frequently while grating.
As others have said about various Microplane graters in Amazon reviews, they're sharp! This isn't a criticism, but a caveat to be very careful. First thing I grated after unpacking it was my forefinger. It was a minor scrape but a real warning to be much more careful than when using my old graters. Since then, I've used it with no mishaps because I know to not even barely touch it in the grating direction.
I see Amazon is using different suppliers for various Microplanes, but Amazon's current supplier for this version, Witbecks, was as good as online ordering gets. Fast, well-packaged, good communication.

Very sharp, watch your fingers or the kiddies.
By Ross A. Seymour
We had the Microplane rasp grater for a couple of years now and really liked it compared to "normal" graters. However, the rasp was a bit fine for hard cheeses sometime, and did not work real well for ginger (it excels in zesting fruits and grating nutmeg for baking). So we recently bought these two graters (this one and the coarse). They work great (mind the pun).
The coarse is good for ginger and hard cheeses. The extra coarse is good for softer cheeses, like cheddar and mozzarella. The length and width of the grater is appropriate for grating over a pizza or skillet. The thoughtful touch is the rubber on the helper bar at the end. That lets you place the grater on a counter without too much slippage while grating.
The graters a substantially sharper than "normal" graters, for better or worse. Mind yourself with these (or letting kids use them). I slipped with on and sheared the tip of my finger off (albeit cleanly).
Good product, worth the money.
